I think the most important invention was the irrigation systems. If it wasn't for irragation systems most civilizations wouldn't have been as successful at farming, therefore making it harder for them to keep a large amount of food for the people. It's pretty much the reason civilizations were able to have food surplus, and increase population making them create more places for people to live, and eventually expanding into empires.
